Also, I'd worry about the consistency. Did you know it's never safe to can pumpkin butter because it gets too thick? I have started your recipe with fresh tomatoes and am wondering if the canned pureed tomatoes are supposed to be boiled down too. Should I just boil my tomatoes until I have 15 cups. (Right now I have 10 cups of puree (was boiling to half), but 6 cups of vinegar seems like a lot if I just have 8 cups of puree. (started with 16 c before boiling to half). I am just a bit confused on that part. It taste...I just put this sauce in the canner..... It tastes a lot like the homemade ketchup that I make but with sweeter and with more vinegar tang. My first time making bbq sauce and overall I think I'd make this one again with maybe some charred chiles in place of some of the onions. Other than ph and density, what other factors are there in determining whether something is safe to can or not?
