Indeed, the recipe was supposed to be with baby bok choy and that is what is photographed. I apologize for the way the dish came out -- I can completely understand why it didn't work; using large bok choy (significantly bigger than baby bok choy) would overwhelm the other vegetables with water. There would be no way in the amount of time that I say to roast it that large bok choy would do anything more than steam and release tons of liquid (as you experienced). Baby bok choy, on the other hand, caramelizes beautifully and crisps up on the edges -- the vegetables taste wonderful and the amount of soy caramel is enough to coat the caramelized vegetables and fish. The dish, as I intended, but not as was printed, is one of my favorites. I'm sorry for the typo that led to your unsuccessful dinner and I hope you will consider trying the recipe again.
